3. How do you feel your staff's visual presentation affects the guests' experience at the hotel?

How the staff are dressed is one of the first indicators to our guests that they are about to experience something unique at the G&V. It doesn't just showcase local design, but our commitment to reflect local culture, namely our relationship with Walker Slater with whom we share Victoria Street (hence the V in G&V). Customers always comment on the design of the uniforms, which serves as a great opener for our team to engage with the guests and talk about the local area, our relationships with Edinburgh based designers and our love of modern, contemporary Scotland. Tweed is an obvious choice, but mixed with some subtle, modern interpretations of the classic suit, really helps the G&V story unfold.

4. What would be your ideal get away? Is visiting another hotel too close to home or do you enjoy the experience of being on the 'other side' of things?

Unlike most GMs I can really switch off at another hotel, although spending most of my time in modern hotels I really enjoy escaping to the countryside, particularly highland Perthshire or past Fort William, where you really can unwind. I don't need anything fancy when I'm away, I'm pretty easily pleased with a nice view and a cold beer.

5. Top cocktail bars

In London, The Artesian bar is one of my favourite experiences. Not just for the drinks, but the experience. The staff are incredibly knowledgeable and the theatre of the drinks is the best in the world.
In Edinburgh, I like classic experiences like Heads and Tales or The Devil's Advocate. Good drinks, happy staff, good music. I'm obsessed with atmosphere. I can forgive a mediocre drink for a good atmosphere, but I can't enjoy a nice drink in a mediocre atmosphere.

Another favourite would be Dandelyan in London—again service and atmosphere make this bar, a great drink is a bonus, and they are great! I've been lucky enough to see cocktail bars all over the world, and I have to say, London and Edinburgh still lead the way. We have the best ingredients and the culture to embrace the trends and not fall for 'fads'.

6. In your down time, what music do you enjoy listening to?

My music taste is 'eclectic' to say the least. I can switch from house to metal, from classic to acoustic depending on my mood. I'm a big concert go-er, so anything loud enough to make your insides vibrate is up my street. Music is my greatest escapism—I'm never not listening to something. Sometimes Slipknot, sometimes Dylan!

7. Have you a favourite guest of all time?

Friends and family. I love looking after them. Especially my parents—always nice to be able to treat them. I could tell you about plenty of some not-so-nice famous guests, but that's for another day!

8. Which of your WS pieces are you most enjoying wearing?

My blue Martin (funnily enough) suit. The jacket fits beautifully. As soon as you slip it on, you know it feels and looks great. It goes with everything—I tend to wear it with jeans or slim trousers, but when you need to put the trousers on, the waistcoat and a tie, it becomes a slick business suit. It has also been great through the winter as a jacket over a slim cardigan and checked shirt when going more casual.

9. WS will soon be opening a store in Glasgow. What's your connection to the city?

I was born and raised in Glasgow’s South Side, still live there, and cut my teeth in the bright lights and late nights of Glasgow’s infamous night life. I used to tell people the best place to go in Glasgow was the M8 towards Edinburgh, but Glasgow’s revival has been phenomenal. For fashion, design, food and retail. I’ll always be a proud Glaswegian, but my heart is in Edinburgh for now. They are completely different cities, both wonderful in their own ways and now both at the forefront of the UK's fashion and design movement.
